What is Midye Dolma?

Midye Dolma is the Turkish name for stuffed mussels. Each shell is filled with seasoned rice and cooked, then eaten by hand with a squeeze of lemon. In Turkish, midye means mussel and dolma means stuffed.

The dish has a special place in Turkish seafood culture and is closely tied to Istanbul. Midyaji Basha is built around this one dish, and we bring it to customers in Amman by delivery.

Stuffed in Turkey, finished in Amman

This is the idea behind Midyaji Basha: Turkish mussels that come to you from Turkey, not mussels that are simply stuffed here.

The mussels originate in Turkey and are stuffed there with seasoned rice. They travel to Jordan by air already stuffed, with the rice partially cooked. We complete the cooking and final preparation in Amman, then send your order out for delivery.

Two ways to make Midye Dolma

Stuffed mussels can reach your table in more than one way. Here is how two methods differ, so you know exactly what you are ordering.

Method A: stuffed in Turkey (our method)

  1. The mussels originate in Turkey
  2. They are stuffed with seasoned rice in Turkey
  3. They are flown to Jordan already stuffed, with the rice partially cooked
  4. Cooking and final preparation are completed in Amman

Method B: stuffed locally

  1. The local kitchen receives the mussels
  2. The mussels are opened and stuffed with rice in that kitchen
  3. Cooking is done locally from start to finish

Both are ways of making stuffed mussels, and every kitchen chooses its own. This comparison describes our process only; it says nothing about any other restaurant.

What it tastes like

The seasoned rice carries the flavor: warm, aromatic spices alongside the gentle sea note of the mussel. A squeeze of lemon lifts every bite.

It is aromatic rather than hot, which makes it an easy first try if Midye Dolma is new to you.

How to eat it

Midye Dolma is eaten by hand. Open the shell, squeeze lemon over the rice, and eat the mussel and rice together in one bite.

In Istanbul, many people use the empty half of the shell as a small scoop. It is made for sharing: order by the piece and pass them around.
